I'm currently working on a baby poncho. All that's left are the hood and the front pocket.

I've never done a 3 needle bind off. I can probably find directions for it online, but my dumb question is this: What size needle do I use for the third needle or doesn't it make a difference?

For a three-needle bindoff, you just want the live stitches of the pieces you're joining to be on some sort of needles (or even stitch holders). The "third" needle is what you're using to knit the stitches of the two pieces together, and it would make sense for this to be the size needle you've been knitting the item with.

Update--one of my references says the "third" needle should be one size larger.

Some knitters like to bind-off using larger needles. I find that most of the time, using the same size needle works fine for me. And that goes with three-needle bind-off.

Yes, I generally use the same size when I bind off, too.
